Chicken Fajita and Rice Soup Serves 7

Ingredients

Gluten free

Meat

  • 1 lb Chicken breast, boneless skinless

Produce

  • 2 Bell peppers
  • 1 (14.5 oz) can Black beans
  • 1/3 cup Cilantro
  • 4 cloves Garlic
  • 3/4 tsp Oregano
  • 1 (14.5 oz) can Tomatoes, fire roasted
  • 2 cups Yellow onion

Canned Goods

  • 5 1/2 cups Chicken broth, low-sodium

Condiments

  • 2 tbsp Lime juice, fresh

Pasta & Grains

  • 1 cup White rice, dry long-grain

Baking & Spices

  • 1 tbsp Ancho chili powder
  • 4 tsp Chili powder
  • 1 1/2 tsp Paprika
  • 1 Salt and freshly ground black pepper

Oils & Vinegars

  • 1 tbsp Olive oil

Nuts & Seeds

  • 1 1/2 tsp Cumin, ground

Dairy

  • 1 Mexican cheese blend and sour cream

Chicken Fajita and Rice Soup - this soup tastes just like chicken fajitas but in soup form! LOVED IT! It's so flavorful and totally filling. Just wait to add the rice if you don't plan on eating it all right away.
